Asafoetida

Asafoetida is a pungent yellow spice which lends a mild allium flavour to dishes. It is a distinctive ingredient typical of Indian, particularly Jain, cuisine. Because of its flavour profile, it is a great addition for those who cannot tolerate onion or garlic in the diet. Be warned; you’ll be taken aback when you open the jar, but this aroma mellows with cooking!
