Home Counties Honey

This honey is collected from the South Downs of the home counties. Made from mixed wild flowers, it has a beautiful yet subtle flavour. The honey is only harvested twice a year to minimise disruption of the bee colony.

The bees making this honey are treated fairly; the bee keepers leave enough honey behind to see the bees through the winter, and any that they collect afterwards is left for them as surplus.


How to Use:

This raw British honey is a delicious sweetener in hot beverages, especially herbal or black teas. It can also be dissolved in a little warm water and added to iced tea. Enjoy honey at breakfast time drizzled on porridge, muesli, yoghurt, toast, crumpets or pancakes.

Honey is also yummy in smoothies, particularly green leaf blends. Use it in raw food recipes including chia puddings, acai bowls, slices and energy balls.

Honey is delicious in marinades and sauces, with tofu or tempeh, and is wonderful for basting roasts and baked hams or drizzled over baked carrots and sweet potato. A little honey can be used to give sweetness to soups, stir fries and hotpots.

It is also great in salad dressings – especially with mustard. If honey crystallises, a natural occurrence, place jar in warm water until crystals dissolve.
